El Parasol (Pojoaque)
The El Parasol concept began in 1958 with Pedro and Lorenzo Atencio, 10 and 12-years-old respectively, selling their mother’s beef tacos and red pork tamales under a patio umbrella on the main street in Espanola, New Mexico. This business venture was limited to the summer months. Price for a taco was 15 cents and tamales were 10 cents. A good day’s sales totaled a whopping $20. Prior to this entrepreneurial endeavor, the one-woman cooking show starring Frances Atencio had played only to colleagues and close friends in addition to her growing family. The two Atencio boys ran constantly from car to car, grabbing tacos and tamales to deliver to the lined-up drivers as their Mom replenished the supply on the patio table. This was possibly an original conception of the “drive-up window,” although there was no window, much less a building. El Parasol is a casual, excellent taste of Northern New Mexico and Mexican traditional favorites. Watch for a colorful beach umbrella logo identifying El Parasol restaurants. There are six locations within three counties.
The logo and the food products are constantly recognized by locals as “best” in the area.
Not only does El Parasol satisfy locals, but many of its family recipe items have been featured in national publications such as Bon Appetit, Gourmet, New York Times and Sunset throughout a span of 50 years.

La Mesita Modern American Eatery
Charles “Smokey” Stover and his wife Barbara opened La Mesita in 1951 in the Pojoaque valley in a small building off of scenic highway 84/285. The mouth-watering simple food coming out of Smokey’s kitchen quickly attracted a local following and began pulling customers from Los Alamos and Santa Fe. Soon his fried spring chicken became a La Mesita staple. Along with the hand-cut red potato fries, flavor-filled cheeseburgers, pan-seared t-bone steaks, and homemade desserts, La Mesita became a valley favorite.

Tesuque Village Market
Like a chic general store, the Tesuque Village Market has been the hub of Tesuque life since 1989. A real place with real food, the menu ranges from great burgers to soups and salads to dinner entreés like Grilled Tilapia and Tomatillo Shrimp Enchiladas. There is al fresco dining on the patio as well as inside seating. This village market has been a local favorite for decades. Stop by after a hectic day in Santa Fe especially if you are looking for a nice quiet place to relax. The pizza is awesome. There is a bakery and a full bar as well. The amount of food you get is incredible. Worth the relatively short and very beautiful drive from Santa Fe (hint: take Bishop’s Lodge Road out of town rather than the highway; the Market is on the left as you approach the center of the town). Stop by and give it a try.

THE LEGAL TENDER Restaurant and SALOON
Lamy, NM is a tiny village founded in 1880 by the Atchison & Topeka Railroad 18 miles from Santa Fe. Lamy serves as Amtrak's Santa Fe station and was once home the Fred Harvey El Ortiz Hotel. The Legal Tender is Lamy's oldest and one of it's most beloved structures. Built in 1881 as a general store, with the Saloon added some time later, as well as the Americana Room. By 1953 the establishment went by the colorful name the Pink Garter. In 1970 it was remodeled and named The Legal Tender. In 1986 it was named to the National Register of Historic Places, then was donated to the Lamy Railroad and History Museum in 2006. Since then the museum has curated and lovingly cared for the building and it's collection of antebellum art, railroad memorabilia and local artifacts. The site was donated to Winslow Art Trust in 2018. Where the pavement ends and the West begins, you'll find the nicest people you'd ever want to meet.

The hollar
Locals love The Hollar in the heart of Madrid. “This is a place to hang out, relax and enjoy good Southern food with elegance,” said Josh Novak, a Cordon Bleu graduate and owner-chef of The Hollar. Novak teams Southern-style cooking with New Mexico’s relaxed, friendly vibes.
Located at the southern end of Madrid’s main drag on Highway 14 (opposite The Mine Shaft Tavern), the restaurant is a laid-back space that consists of a single room that can serve approximately 28 diners and an outdoor seasonal patio that seats 20. Some sample menu items (subject to change) include fried green tomatoes coated with cornmeal crust and topped with lavender flavored béchamel sauce; fried pickles (unexpectedly delicious!); a lovely chopped tomato, olive, onion, lemon and feta cheese bruschetta; prosciutto cheeseburgers; crispy chicken breast in a cornmeal crust atop a bed of cheesy grits and braised pork tenderloin.
Home-baked breads and desserts from The Hollar’s own bakery round out the offerings.

The Mine Shaft Tavern
One of the Last Great Roadhouses!
When you “belly up to the bar” at the Mine Shaft Tavern you will be served from the longest stand-up bar in New Mexico!
In 1944 the construction of the Mine Shaft Tavern was begun, the last of the “company town” buildings erected. The 40 ft. lodge pole pine bar, as well as most of the furnishings you see, were here in 1946 when the Tavern first opened its doors. While the Tavern is now open seven days a week, little has changed since the mining heydays.
The “Shaft” is known for its New Mexico Roadhouse Cuisine, Green Chile Cheese Burgers, Great Daily Specials & Desserts. They also offer vegetarian items and local Waygu Beef. Full bar with fresh squeezed Margaritas and 12 beers on Tap! In the 1950s most of the mines closed and Madrid became known as a ghost town for about 20 years.
The Mine Shaft Tavern and Madrid’s Old Coal Town Museum were listed on the 2005 “most endangered historic places.”

tumbleroot brewery, distillery & tasting room
Tumbleroot was first imagined in the Fall of 2015 when co-founders Jason Fitzpatrick and Jason Kirkman, were on a biking tour of Denver breweries and distilleries. They had a clear idea of what they wanted to do and what would make Tumbleroot unique.
First, it would be a combined brewery and distillery production space, capable of making a wide variety of beer and spirits. Second, to create a multifaceted taproom (music venue, outdoor space, marketplace), a community hub where they would offer their products along with other local craft goods.
Tumbleroot, they imagined, would be about making things from scratch using seasonal, wild, and organic ingredients, and would also be about developing relationships with and tapping into the creativity of partners from the community. After two years of planning and searching, they began construction of their Bisbee Court production space and Agua Fria Street taproom in the summer of 2017.
Tumbleroot Brewery, Distillery and Tasting Room
Bisbee Court is the home to the Tumbleroot production facility. This location, just south of town off of Rancho Viejo Blvd, houses both a brewery and a distillery, as well as a small tasting room where visitors can watch production through picture windows. The tasting room bar and bottle shop is open from 4pm to 8pm everyday. Brewery and Distillery tours coming soon.
